Back To School Recipe 5 - Cheesymite Scrolls

300g self-raising flour
90g butter, chopped
2 tbsp butter
5 tbsp Vegemite
1 cup cheddar cheese, grated
Preheat over to 220C or 210C fan-forced
Grease 20cm round cake tin with butter and set aside
Sift self-raising flour into bowl
Add butter and rub until mixture has a bread crumb texture
Add milk and mix gently until dough forms
Sprinkle extra flour over table top or chopping board
Add dough and knead until smooth.
Roll out dough to 1cm thick.
Spread butter & Vegemite over dough.
Sprinkle over grated cheese
Roll up the dough, and use a sharp knife to cut roll into 3cm slices
Place slices in prepared cake tin with cut side up and bake for 20 minutes or until golden.
Leave to cool on a wire rack.
