Back To School Recipe 2 - Spinach & Feta Muffins

Spinach & Feta Muffins

Ingredients

150g feta cheese, crumbled
250g spinach, chopped
1/3 cup sun-dried tomatoes, chopped
3 cups self-raising flour
1 egg, lightly beaten
1 1/4 cups milk
100g butter, melted
3 tbsp parmesan cheese

Method

Preheat oven to 180C or 160C fan-forced
Sprau 12 cup muffin tray with cooking oil
In large bowl, combine feta cheese, spinach & sun-dried tomato
Sift self-raising flour over mixture and combine well
In separate bowl, whisk together eggs, milk & butter 
Add milk mixture to flour mixture and stir until just combined
Spoon 1/3 cip measures of mixture into muffin hole
Sprinkle parmesan cheese over top of each muffin hole
Bake for 20 minutes, until cooked through and golden
Leave to cool for 5 minutes, then transfer to wire rack to cool completely.
